spicy cucumber coils

Topline Farms

Serves: 4 | Prep time: 20 minutes


Ingredients:


  • 6 Topline Farms® mini cucumbers

  • 1 tsp salt (for drawing out excess water)

  • 2 cloves garlic, finely minced

  • 1 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 tsp honey (or maple syrup)

  • 1 tsp chili flakes (maybe more if you can handle it)

  • 1 tsp toasted sesame seeds

  • 1 green onion, thinly sliced


Make It Happen:


  1. Coil with Confidence

    • Place a cucumber between two chopsticks to prevent cutting all the way through.

    • Slice thin diagonal cuts along one side.

    • Flip it over and make straight cuts down the length of the cucumber.

    • Gently stretch it out—watch the spiral take shape.


  2. Salt & Sweat

    • Sprinkle the coils with salt and let sit for 10-15 minutes to draw out excess moisture.

    • Rinse and pat dry.


  3. Whisk & Pour

    • In a bowl, combine garlic, soy sauce, rice vinegar, sesame oil, honey, and chili flakes.

    • Toss the cucumber coils in the dressing until fully coated.


  4. Finish & Serve

    • Top with sesame seeds and green onions.

    • Serve immediately for the best crunch.
