Ingredients:
1 cup cherry tomatoes
1 cup baby bocconcini (mini mozzarella balls)
2 cups mixed greens (spinach, arugula, and baby chard)
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Salt and freshly ground black pepper, to taste
Optional: fresh basil leaves, chopped
Instructions:
Prepare the Ingredients
Rinse the cherry tomatoes and mixed greens under cold water. Pat dry with a paper towel
Halve the cherry tomatoes and place them in a large salad bowl.
Drain the baby bocconcini and add them to the bowl with the tomatoes.
Assemble the Salad
Add the mixed greens to the bowl with the cherry tomatoes and bocconcini.
If using, add chopped fresh basil leaves for an extra burst of flavor.
Dress the Salad
Drizzle the extra virgin olive oil and balsamic vinegar over the salad.
Season with salt and freshly ground black pepper to taste.
Toss and Serve
Gently toss the salad to combine all the ingredients and evenly coat with the dressing.
Serve immediately as a fresh and light appetizer or side dish.
