Cherry Tomatoes and Bocconcini salad

Ingredients:


  • 1 cup cherry tomatoes

  • 1 cup baby bocconcini (mini mozzarella balls)

  • 2 cups mixed greens (spinach, arugula, and baby chard)

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and freshly ground black pepper, to taste

  • Optional: fresh basil leaves, chopped

Instructions:


  • Prepare the Ingredients

    • Rinse the cherry tomatoes and mixed greens under cold water. Pat dry with a paper towel

    • Halve the cherry tomatoes and place them in a large salad bowl.

    • Drain the baby bocconcini and add them to the bowl with the tomatoes.

  • Assemble the Salad

    • Add the mixed greens to the bowl with the cherry tomatoes and bocconcini.

    • If using, add chopped fresh basil leaves for an extra burst of flavor.

  • Dress the Salad

    • Drizzle the extra virgin olive oil and balsamic vinegar over the salad.  

    • Season with salt and freshly ground black pepper to taste.

  • Toss and Serve

    • Gently toss the salad to combine all the ingredients and evenly coat with the dressing.

    • Serve immediately as a fresh and light appetizer or side dish.
