Fried Eggplant

Ingredients:

2 TopLine Farms Baby Italian Eggplant peeled and sliced into ½” rounds

2 Tablespoons Canola oil

3 Eggs, beaten

2 Cups dry bread crumbs

Directions:

  1. Heat oil in a large skillet over medium-high heat.
  2. Dip TopLine Farms’ Eggplant slices in egg, then in crumbs and place in hot oil.
  3. Fry 2-3 minutes on each side, or until golden brown.
  4. Drain and pat on paper towels.
  5. Enjoy!
